I was finally able to catch one today on a very small spoon. I fished a few different things and that's what ended up working. It was below zero and the water was beginning to form ice crystals, so that goes to show you how these fish will be active in very cold water. It was one of the original Trout, so it was a nice big one that I kept. The smaller ones were all over my lures, but never committed.

A couple of interesting things...

The flesh of the trout was very, very pale. I'll attach a photo of these fillets (I did not do a good job on them, be warned) VS fillets I took off of another similar sized trout from the pond a couple of months ago. I believe this was a male and I know the other one was a female (eggs), but I'm not sure if that has something to do with it. Anyways, is there a reason why the meat quality would go down in one fish VS another from the same BoW?

Also, I did seem to find black mush in the trout's stomach, so I believe was eating pellets. It's interesting that the older trout are eating pellets even though they haven't seen them for three years since they were stocked.
