This may not be very scientific answer for you but in layman's terms, picture a microscopic particle of clay floating in the water. By adding Gyp and or lime will cause the particle to swell and become heavier sinking to the bottom. Using lime will be cheaper but gyp will work better. And then there is Alum/lime treatments for clearing water.
