We looking for new recipes to cook all those fish we are getting ready to catch. Anyone willing to share those family recipes with the rest of us?

My friend raved about this a couple of years ago. I finally called his mom and got the recipe last weekend. Should work with crappie, tilapia, bluegill, bass, any lean mild fish.
Walleye chowder: 1 lb. fillets cubed 1 stalk celery diced 1 carrot diced 1/2 onion diced 3 medium potatos diced 1/2 stick butter 1/8 cup flour 1/8 cup water 1 can chicken broth 4 cups half and half (or milk and more butter) 1/8 tsp pepper 1/8 tsp cayenne pepper
Melt 2 tbs butter in dutch oven. Add diced vegetables except potatoes and sweat over medium heat until onions are soft. Add broth, milk, spices, remaining butter and potatoes, bring to a boil then reduce heat and simmer for 25 minutes stirring occasionally. Mix flour and water and stir into pot along with fish, bring to a boil, boil one minute then remove from heat. Cover and let stand for 5 minutes. Serve with hot sauce if you like.
