My friend raved about this a couple of years ago. I finally called his mom and got the recipe last weekend. Should work with crappie, tilapia, bluegill, bass, any lean mild fish.

Walleye chowder:
1 lb. fillets cubed
1 stalk celery diced
1 carrot diced
1/2 onion diced
3 medium potatos diced
1/2 stick butter
1/8 cup flour
1/8 cup water
1 can chicken broth
4 cups half and half (or milk and more butter)
1/8 tsp pepper
1/8 tsp cayenne pepper

Melt 2 tbs butter in dutch oven. Add diced vegetables except potatoes and sweat over medium heat until onions are soft. Add broth, milk, spices, remaining butter and potatoes, bring to a boil then reduce heat and simmer for 25 minutes stirring occasionally. Mix flour and water and stir into pot along with fish, bring to a boil, boil one minute then remove from heat. Cover and let stand for 5 minutes. Serve with hot sauce if you like.
