Hey all I was wondering if anyone has any info on a bluetooth type of temp sensor and data logger with about 4 probes on it - would be cool to set up at different depths and chart water temps all year round..

That would be a cool setup, but likely something that would have to be custom made. Thermometers sold for pools and ponds are very simple devices, with short probe lengths - 10 feet or less. I found a Chinese thing on Amazon described as a "boiler" thermometer with a 30 foot cable.
Now that I aerate my pond year-round, the water column is a uniform temperature, so just a surface temp is all that is needed.

FWIW, The battery life on BT like that may be shorter than you would like, and transmit distance also poor. It is something I have considered making as a product, but with multiple sensors suspended in the water column to find the thermocline. This gets more complicated as to get any reasonable send distance, you need to use something other than 2.4GHz radios. ISM band 915MHz is commonly used for metering systems, and can reasonably broadcast data a mile or more, just infrequently. But now you need both the measurement device and a receiver, usually with a little processing power like a NUC PC or your own machine. Now you start talking hundreds of $$$ to measure water temperatures, where you could just lower a probe in by hand for next to nothing.
