Hi there,
We are located in Ontario and we dug a pond on our property which is primarily pit run and rock. We used it to make a new driveway and fill around the house, etc.

However, now I want to turn the big hole which is perfectly placed for a pond, into something that will hold water.
So I started bringing Clay in and lining it with about 12 inches to 18 inches everywhere around.

My next questions tho, is whether or not there is anything I can do when the pond is full, to make it still enjoyable for the kids to walk around in. Would they just sink in the clay, or does the pressure of the water / time for it to settle make it more stable?

The pond is quite big, and the deepest spot is 15ft including the depth of the clay.

You should have come here before adding the clay. To get that loose dug hauled clay to hold water it should be spread out or distributed in 5"-6" thick layers also called lifts and each layer compacted very well with a sheepsfoot roller. This compaction technique compresses the clay tightly and the heavy knobby roller knits each lift together so water does not seep between the layers or compacted sheets. The more compacted lifts there are the better the basin will hold water. Just compacting a 12" to 18" thick layer with any tool or device including a bull dozer will not compress the clay clumps well enough and deep enough so it prevents or at least minimizes seepage and leaks. Contrary to what most people think a heavy bulldozer is not a soil compacting device which is why good, large construction companies have sheepsfoot rollers and vibratory sheepsfoot machines / equipment.

Quality of the clay material also has a big part of how well the pond will hold water after proper soil compaction. Proper moisture in the clay material also aids in best compaction.
