Hi All! I love American Lotus flowers and I have heard that the root is edible and can grow quite large. However my lotus roots are all very thin and don't resemble photos I've seen of 2 to 3 inch thick roots. Has anyone eaten lotus root before? Please send me a PM if you have a variety with large roots, it'd be fun to try growing some of those in my pond. Thanks, Judy

I have eaten it but not sure what variety it was. But I have seen lotus for sale online which mention that the root was a good size for eating.
All advice should be regarded as being pulled out of my @$$ or as second @$$ knowledge. Reader responsible for confirming.
