Just got back from cooking for a group of dove hunters in south texas. One guy brought some red snapper fillets and then ask if we had ever had snapper throats. We grilled them and they were really good. We cooked the fillets in the dutch oven and they were out of this realm. Anyone had snapper throats before?

I think I've had what you're talking about heybud. It was the triangle shaped piece from just behind the gills, I think the pectoral fin was attached to it. The ones I had were grouper and they were fantastic.

Redfish throats are one of my favorite. We bag them separate and soak in Italian dressing. A little lemon pepper and I like to grill on a mesquite fire. They have built in handles. Never tried snapper...

this reminds me of fish cheeks (someone should have fun w/ that statement)

y'all ever eat the cheek meat? its like getting two mini filet mignons in every fish head.
