Dear Pond Guardians, I am a restaurant owner. I want to serve TX or American catfish to my customers. The restaurant service companys offers catfish from China. I want to support catfish farms in America. Do you know who I can contact: to purchase ready to cook American Catfish for commercial restaurant? Thank you Dixie

Hi Dixie. I can't help you with an answer, but I can welcome you to the Pond Boss forum. My way is to tease... Dear Pond Guardians, I want to serve TX or American catfish to my customers. PS: I've been cooking professionally for most of the last 30 years.

There have been "issues" over fish raised in China. Probably very smart of you to consider USAmerican sources. Hopefully somebody has some information.

I went too far again didn't I? Well Dixie, here's a starting point: http://texasaquaculture.org/id108.htmlYou could start calling numbers on that list and I'll bet you'll find a source quick enough. Todd Overton is on that list and I would guess that he could steer you in the right direction. He also posts here. Good luck!

Contact Dr. Mark Griffith of Purina Mills. Mark is the Director of Zoo and Aquatics. He ought to have an idea who to talk to. He's a nice guy and formulates the feed that the cats eat. Raising them is a cottage industry in Miss, La., and Arkansas; maybe further East. Tell him the guys on Pond Boss said Hi.

Thanks for thinking American, Dixie. Or at least Texan.

It sounds like a really great marketing idea. No lead based catfish. Where are you in Tx?

Dixie, after you find a source of high quality fish you'll have a great opportunity to promote your restaurant. I would take out a few local adds about it and mention it on the menu.

You might call (937) 322-9006 Catdaddy's Cafe. They have the best tasting catfish I've ever had.

Here's an interesting thought. The catfish farmers have found that people like the idea of eating more fish but really don't like the taste of CC. So they are fed almost pure soybean chow to come up with a bland, tasteless, product that can manipulated by sauces while cooking or on the table.

What should CC be fed to taste like a porterhouse?

Catdaddy's is closed. Yet I called the number and the owner said Sysco the big restaurant supplier is supplying Chinese catfish. She said I need to find a processor.Texas doesn't have one, but one is in the works. She got Catdaddy's from Southern Catfish in Mississippi. http://catfishinstitute.com/?q=catfish_quiz.htmlA great resource lists processors for American catfish farms under Industry info. Thanks a lot. Keep up the pond work. Dixie
