It looks like I bought too much Aquamax feed this year and will have 1 bag leftover. Will it spoil over the winter? Do I need to do something to keep it fresh?

I've kept it over the winter with no apparent issues. At least it still smelled and looked the same, and the fish ate it the following spring!

It's possible it could get depleted in Vitamin C. However a Purina Mills rep told be they add "Stay C" so it should be good for a year. However it would be nice to get that verified as...
Definitely keep it in a cool dry place.

I've kept it over the winter (AM Largemouth Pellets) but I've had what looks like flour beetles show up in it the next Spring. http://en.wikipedia.org/wiki/Flour_beetle

I know more about storing grain than feed, but some of the same things should apply.
Cooler is better. If you can keep the temperature lower it will keep longer giving everything else being equal. So a cold shed is better than a heated garage if rodents and critters are kept at bay. A large galvanized or plastic trash can with lid or a plastic or steel barell with a locking lid works well.
Freezing should be fine. On grain with higher moisture levels sweating can become a problem as it warms up in spring, but on dry product it should not be an issue.
What you don't want is it to get wet and mold. Don't feed moldy feed. Bad deal.

I overwinter unused feed in a metal trash can with a secure lid, like snrub says. And, it's stored pondside, out of the rain but exposed to the winter temps.
