I wondered how big those Yellow Perch were....

Hello.

About 4 inches, they are clean like sardines, I cut the head in half and I pull out the intestines with.

It's crispy outside but very tender inside.

Next year I will raise them up to 6 inches to replace the Beacon.

There might be a market for that.

A little hot sauce, preferably Trappey's Red Devil, or Boardwalk Hot Sauce from Put-In Bay, Ohio, and it's golden!!!

Hot sauce, IMO, needs to be flavorful. Not painful.
