Our home sits at the edge of our pond of around 1.5 acres. We fish it and look at it. I am in a constant battle with keeping the weeds and plants from growing up around the pond edges (not in the water but on the shoreline). My dam cannot be mowed because it is too steep. So I have resorted to round up type products and a weedeater to keep it under control. Am I missing a better way to keep my pond shoreline looking better?

You could consider limestone around the edges you wish to keep weed free, Tim. Works, and works permanently. Downside is the the cost.

Roundup or Rodeo kills everything including the grass. I use Rodeo sparingly to spot treat, it seems like the places that I treat almost always grow back weed heavy with little grass the next year. One of the things you might try is a wheeled string trimmer to knock the weeds down and to encourage the grass to crowd out the weeds.
