I think ghost shrimp is my favorite bait. The bream don't have to be bedding or especially hungry to hit shrimp.
Night crawlers are hard to beat all around. Bream tend to hit crickets viciously, which is very enjoyable, but you spend a lot of time putting on bait. Bedding bream sometimes bite on tent caterpillars, and I've caught 10-12 on 1 soggy, leathery caterpillar. Gambusia are fairly reliable bream bait, if the fish are hungry.
The artifical white grubs and red worms have worked well for me at times, but not as consistently as live bait. I like the way it stays on the hook fish after fish.
