What kind of water did you catch it in? All fish will take on the taste of the water they live in. I am experimenting with raising CC in relatively fresh pond water, shale bottom, and fully expect them to not have the traditional 'musky' or muddy taste. Soaking the meat in water can not entirely eliminate the taste from brackish water. I wouldn't want to continue living if I had to stop eating catfish fillets!!!
