I have seen a couple blue herons on my pond and several coons tracks. This past weekend, there were 3 blue gill about 3 feet from the bank, a couple had what looked like a hole in them and the tops of their backs eaten along with the meat of the fish. What does it look like when a fish is eaten by a heron, what else could this have been? Do coons catch and eat fish?

The spiked hole would indicate a heron. Racoons might eat all of the fish or leave just the head and tail.
EDIT: I don't know if the racoons would catch fish. I think that they'll eat the fish if thrown up on shore.
Excerpt from Robert Crais' "The Monkey's Raincoat:" "She took another microscopic bite of her sandwich, then pushed it away. Maybe she absorbed nutrients from her surroundings."

Good point, Sunil.
Could also be both. Heron creates initial spiking, then raccoon takes a free nibble of injured fish. Maybe?

I agree with LBuck. Coons are not to good at catching live healthy fish. An otter would also be possible.

The answer is, yes... when he can't get his grubby little paws on your 10" bluegill.
