My brother has a small pond in north Georgia. He wants to stock it for kids to fish in. Its only 25 x 125. I suggested Georgia Giants or hybrid bream and sexing them so they will not reproduce. Is this feasible?

Yeah, it should work but not perfectly. Somehow the GG's and hybrids aren't all that perfectly hybrid. Not sure how you could reliably sex them unless you started out with sexually mature fish. Even then, it's tough and most people make mistakes.
If it were me, and it's not, I would also toss in some Channel Cats as predators for the offspring. Use a feeder and everything ought to work out well for quite a few years. Then, several years down the road, start over.
It's not about the fish. It's about the pond. Take care of the pond and the fish will be fine. PB subscriber since before it was in color.
