I spoke with Bob over at Tyler Fish farms this morning and he told me it was too late to stock minnows. He'd sell them to me if I wanted, but the water temps are too cold for them to spawn and there was no advantage or reason to put them in at this time of the year.
He said to wait until after Feb 15th and a few warm days, then put fatheads and bluegill in at the same time. I didn't ask about catfish, but will when I see him in the spring.
