you can use a treble hook and bait but tie it off to something on the bank. some people down here get in the water and feel for them on the bottom and when they find them they feel there back to see which way the head is and then grab them accordingly.i have only heard this method never seen it, but i would never try it. i have seen people bit by snappers and they scream loudly so just be careful.
