10X - In my experiences with grass carp their individual taste for foods varies significantly. I see variations in how well GC eat pellets. I think some GC relish pellets and some GC prefer to eat plants if they are available. Even people and dogs have preferred foods they like to eat best. I have GC in one pond that never eat the pellets and I rarely see them. In the other two ponds WITHOUT plants due to GC eliminating all the plants, the GC are like yours always eagerly eating any form of pellets. The difference among my ponds is the pond where the GC do not eat pellets there are a couple other species of plants always present for them to eat.
In another local pond that had submerged plants, the GC relished the pellets. He shot the GC. I might do the same thing to the pellet eater and start over with one GC when plants become abundant.
One option for you is to eliminate the pellet eating GC, allow some plants to regrow and then restart with just one GC. Then in 2 years, if plants get overly abundant add the second GC or another 1 yr later later, add the third GC. IMO allowing some plants to be present does a pretty good job of competing with nuisance algae problems.
