Raising trout, rather than raising trout AFTER spawning them, is a much easier task!
Can you go online and find a couple of fish suppliers in your area that supply trout? Find out their species, sizes, and time of year that they prefer to deliver in your area. (Also find out the prices for your own personal budget.)
Decide which species you want (you might be able to do multiple species in your conditions), and the size, and the approximate stocking date. I would then start a new post with that info plus the size, depth, and temps of your existing ponds. You will also need to have a grasp on the existing organisms in the ponds.
I expect the actual experts will tell you to "start over" on the pond organisms. They will probably also recommend a pellet feeder to supplement the recommended aquatic forage.
Finally, they may also recommend an aeration system. (Did you estimate a distance to AC electricity at your property?)
You can be a (mostly) absentee owner and still have your ponds and fish well cared for if you do your set-up correctly.
