Ideally, take it from shallow to deep. Shallow temps will vary a lot from day to day, depending upon weather, deeper temps not so much.
When it gets hot, you can discover where the thermocline is, which is the deepest fish will go to seek cooler water with adequate oxygen. Usually in the 7 to 9 foot range, depending.
