Fish Hatchery Management, Second Edition, Gary A. Wedemeyer, editor, published by American Fisheries Society. It's $71 for hardcover and $56 for soft.

Fundamentals of Aquaculture: A Step-by-Step Guide to Commercial Aquaculture, by J. W. Avault, Jr. It's more expensive at $106, but commercial operations have different concerns than the hatchery management book listed first.
