I use an old fashion swimming pool thermometer. I attached a small weight to the bottom to get it to sink. I asked the question once here on the forum what depth temperature measurements are made when posts say things like "CC start actively feeding in my pond when the water temp reaches 60." The answer I got back was 24 to 30 inches so my thermometer is attached to paracord with a float located to take readings at about 26 inches depth. I just throw it out from shore to where I want to measure the temp, let it soak a while then haul it back quick as I can to read the thermometer. Readings are not perfect but I figure close enough.
