Given the requirement of 'in your pond' in the initial question I'll go with cold water caught BCP...phenomenal table fare any way you fix 'em.
I would say that of all the (commonly available in IL) fish I've eaten there's only one that can beat cold water BCP - and that would be WE. My WE are itty bitty so I can't speak to their table fare yet. Maybe in a couple years....
Now if you take me up to the Pacific Northwest and let me get into some RBT and/or King Salmon, all bets are off.
