I took care of my Gramps the last 10 years of his life, and the last year and one half were the tough ones helping with diapers, picking him up, washing him, etc. Through all of this, I tell folks dig deep for all the patience you can muster and always remember that for all we know once "they're gone, they're gone". At least in the physical sense. So take every opportunity to sit with them, hold their hand, chat, etc.

If she is talkative and you've not done so, consider recording her. I sat and asked Gramps questions, and essentially got him saying everything his daughter (my ma) may want to hear after he passed - Merry Christmas, I love you, her name, what he did growing up, etc. Even when dementia set in, I still recorded him knowing I could edit the recordings later. From all the recordings I'm always surprising my ma here and there with her father's voice.
