I'm sure its a time consuming job to ID every fish. But they are selling certain specific fish. Not 'whatever fish'.
You can see pics of hatcheries and its pond after pond right next to each other. All they have to do is keep one particular fish in each pond.
Fish and minnows always seem to somehow find their way into ponds or lakes that they were not stocked.
