Don't think you would have any problems restricting the flow like you want to. Reason being is I asked my well driller about something similar and he said it wouldn't hurt the submersible well pump because they are designed to handle that situation. I was going to install a valve above ground to restrict down the flow if I wanted to. Again he said no problem. In fact I contacted the well manufacturer and their engineer concurred. However I never did do it.
If pigs could fly bacon would be harder to come by and there would be a lot of damaged trees.
