In my time away from the forum, I had a chance to finally try out Catmandoo's venison pastrami recipe. While it is not his, the finished product turned out to be fantastic and has been a huge hit for all who have tried it. Lots of work still left to learn about smoking meats and dialing in this recipe, but so far no one is complaining about the results!
