Minnows, red worm's, chunks of crawler, shrimp, jig's, crawfish pieces... the list goes on. We mostly use small minnows, what they call Perch Minnows up here. They are of various kind's but usually about 2" or less. At least in the lakes, YP school, so you have to find them.
My BIL was going to add a big pontoon to his charter service, and call it the "Perch Patrol". Would have been cool, but family issues in another state messed that all up.
Dipped in your favorite batter and fried in peanut oil is pretty darn good eats.
