I think you'll be fine with 8 to 10 inch trout. Even at that size the slower moving fatheads will be an easy targer. This is ehanced as the water cools and the trout have a faster metabolism. If fed well they can grow up to 1.5 inches per month so they wont' stay that small very long. If the winter is mild again you'll have some nice trout by spring.

Any species will work for you: brooks, browns, rainbows, tigers etc. If it was me I'd mix them for variety. The brooks will croak on you earlier in the spring though as the water warms up. As Travis says the browns tend to be hardier in marginal water temps but there are exceptions.
