I helped do what you are talking about in fish culture class in graduate school. Your unit is probably a system sold by Frigid Units Inc. At school we just laid the eggs on a floating screen to hatch them. Eggs were periodially dipped in formalin solution or something similar to minimize fungal growth. Then we fed fry a trout powder. Trout are domesticated enough that they readily accept dry / moist food at swim-up when yolk is almost absorbed. Frigid Units, Toledo Ohio may have some info how to do this.
