I have almost the exact same situation. Absentee owner with poachers.
My advice is get aggressive with the trespassers/poachers. Make sure the property is fenced and posted in accordance with local laws. Spread the word that trespassing will not be tolerated. Install game cameras to catch images of the trespassers/poachers. Call the Sheriff when you have images.
Also I am intentionally not clearing weeds along the shore line to make shore fishing more difficult. I want to discourage the walk in fishermen as much as possible.
