As said, taste is in response to demand. The fish farmers feed a soy type pellet that produces a product with virtually no taste.
Why? Consumers were found to like the idea of eating fish but disliked the fishy taste. Thus, a lot of tartar sauce is sold to jazz up the bland taste.
