The more that I read about them, the more that I'm leaning towards putting some in the pond.
My only concern is that I have enough forage fish in the pond for them to pull thru the ice season without losing weight.

Little ones taste OK, but I'd never eat a bigger one. They have too much value. I'll confess my ignorance. Value as what?

Dont let the worry of a hsb losing a little weight over the winter keep you from enjoying them all spring, summer and fall!
Their metabolisms slow down to the point of not really needing much to eat to sustain life. When i keep fish in a tank in cold water below 50's they dont hardly ever eat in 2 months, bump the water temp up to the 80's and they will die in like 2 days without food.
