The removal of the dark meat is key for many species, bluefish is the biggest one I can think off. That surface action for white bass is a blast! When larger stripers are mixed in all the more fun... I think it may just be my favorite kind of fishing. Anything with hungry predators chasing baitfish on the surface is top notch fun to me!
