George, If I don't cook a trout like DIED mentioned above within about 2 days of catching it, I just fillet off the meat, saute them in butter and mix with cream cheese, shredded cheese, and whatever else I can find to throw into the dip! Sour cream and mayo can be substituted for the cream cheese.
