See how long it takes to fill a 5 gallon bucket from the outlet with the most water output (frequently the one closest to the pump). That would give you a ballpark figure.

Whether a well can be run dry depends on the pump's output rate and the refresh rate of the aquifer. I can run either of our deep wells here dry; one in about a half hour and the other in less than 10 minutes.
