Brian,
I read that the fish stick people found a way to cook the fish just enough to where those Y bones fall apart, they use the pacu to make the sticks.
The fat on my is more yellowish and firmer than you describe.
1/4 & 3/4 acre ponds. A thousand miles from no where and there is no place I want to be...
