A trick I learned from an old fisherman for deer flies: When one starts bothering you, hold you hand flat (salute style) just over the top of your head. The deer fly will land on it shortly.
Then bring your hand down slowly, and smack it with your other hand. It is very gratifying to watch them fall to the ground.
I usually have a couple choice words for them as they fall.
