If you ever get out west, stop in at the Bonneville trout hatchery in Oregon. They have white sturgeon the size of navel torpedos in show ponds.
They are the coolest looking fish when they are small, but they are going to churn the bottom of your pond pretty agressively. They are not what you would call a warm water fish either. If you don't have soft mud in your pond, it would be fun to try them. They also taste fantastic, especially when smoked.
