The ducks that I've seen around here dig in the dirt at the pond banks and eat the roots of plants. I think that you might have a hard time getting something established unless you put down some sort of fence material on the ground to prevent the ducks from doing a lot of digging.
Like laying down chicken wire and getting the plants to come up through it.
