I haven't cleaned any of mine yet but when we catch them on the lake down your direction they taste awesome...just be sure to cut the red meat out of the middle of the filet. How we clean them is just filet as normal...on the outside of each filet some of the meat will be a reddish tint - reminds me of what Mackerel looks like. We filet that right off, leaving only the white meat. In my experience doing that removes 95% of the 'fishy' flavor. Hey thanks for that info on cleaning!! I wasn't for sure on what to do with them.
