I'm on it Al. Been working all summer trying to prepare for the upcoming sugar season. We have a new cupola on the sugar house, so hopefully it will quit raining indoors, and we'll actually be able to see each other from the waist up. Still figuring out the greatly expanded sap collection and storage system we're going to need when we ramp up production in a few months. Lots more to do.

On a related note, and tying in with my previous posts, my wife had a client of hers ask when we would have more syrup for sale. When she was told it wouldn't be until Feb. or March, she was astonished. "I need some to give as Christmas gifts....can't you make some now?"

She was astounded to learn that there was a season for that, and you couldn't do it ALL the time. It doesn't work that way. Mother nature makes the call, not us. Instant gratification....."I don't want to wait."

Another pound of Sang in the ground. Whew.
