I figured Omaha would comment on the Drum he seems to be one of the few that care about these fish. As they are much fun to catch and with the size in the pic are pretty tasty.
Omaha, what would you consider as prepared correctly?
The fish/fillets need to be iced right away and the red meat removed. That's basically it. Put that next to walleye and you won't know the difference.
