hi george. we typically only use two recipes both good for the BBQ.

1) put cleaned fish whole or fileted in heavy duty foil
put thin slabs of butter in cavity and on top
put thin slices of lemon in cavity and on top
wrap/seal up foil around fish so it will hold cooking juices
put on preheated BBQ on side or rack away from flame
cook for a 1/2 hr at most (small fish 15 minutes, large fish 1/2 hr)
serve and use accumulated cooking juices to spread on fish on plate

have a nice rice with it, put the cooking juices on rice too.

2) get some lowry's teriyaki and pineapple marinade
soak filets or whole fish for at least an hour in marinade (usu. do this in fridge)
put fish and marinade juices in foil and cook on BBQ as described above.

after serving fish on plate, dribble on some PURE maple syrup on the fish (to taste), you wont be dissappointed with this one. they taste surprisingly smokey and yummy prepared this way.
