We have a two and a half acre pond... and last summer it was taken over by American Lotus. This is the first time in the ponds history that this has happened... We need to know how to prevent this from happening again... We are already seeing evidence of this plant this year... We want to take care of it before it gets out of hand, like last summer. What is the best organic way to get rid of this plant? and Is there a way to get rid of it for good?

I suspect by including the term "organic" that you're against using herbicides for some reason?
If that is the case, you can invest in an underwater cutter-device and spend numerous hours (repetitively, throughout the growing season) harvesting the lotus. Also, it would be advisable to remove the severed stems and pads from the ponds to reduce organic-loading of the benthic zone.
Or, you can drain the pond and leave it drained for several years, during which time the lotus roots and latent seeds "might" eventually die if the ground dries out enough for a sustained period.
Neither of these options qualifies as "organic" (they're actually "mechanical" and "cultural methods", respectively).
