Just curious, what species in your pond tastes the best?
I'm not even a big fish eater, mostly catch and release my whole life. Canadian Walleye doesn't even get me excited (my dad dreams about it). However if I buy a pond I'm sure I'm gonna have to change.

Hi. I've been reading your other posts as well. Good luck with the pond!
My wife and I are partial to catfish (usually the smaller ones up to about 2 or 3 pounds) and bream of any size. She doesn't like whole fish so I filet the larger ones. Smoked bream are fantastic.

Of the two basic species I have in my pond, Largemouth Bass and Bream :(Bluegill and Red Eared Sunfish) the fish I like best to eat are the bluegill. I eat the Bluegill, return the red ear and bass over 14 inches to the pond, and give away the small bass. Red Ear don't breed as often as bluegill and are so beneficial to the pond that we don't eat them. They likely taste just like bluegill.

I don't have any in my pond, but I think the best freshwater game fish bar none...are crappie...but, I guess that's my southern Louisiana upbringing...
...when in doubt...set the hook...

Yellow perch...Fillets are $14/lb+ at you local grocery store if they have them and you want to "eat before you buy!" If you do, multiply by 2 for fresh fillets. Crappie will definitely do in a pinch and I do love my catfish. Bluegill are also fine eating...Ah heck, they're all good!

Given the requirement of 'in your pond' in the initial question I'll go with cold water caught BCP...phenomenal table fare any way you fix 'em.
I would say that of all the (commonly available in IL) fish I've eaten there's only one that can beat cold water BCP - and that would be WE. My WE are itty bitty so I can't speak to their table fare yet. Maybe in a couple years....
Now if you take me up to the Pacific Northwest and let me get into some RBT and/or King Salmon, all bets are off.

Catfish. Bream and Crappie are great eating fish too, but even if they aren't everybody's favorite, everybody likes box size catfish.
