Tomato sandwich recipe
We got lucky this summer and our tomatoes are coming on strong, most of us enjoy a good tomato & mayo on bread sandwich, right? I'm fishing for ideas on trying new combinations, the bread, mayo and tomato combo is getting old.

Add a little grilled or fried fish to the sandwich and some hot sauce and even a little lettuce. That will improve your tomatoe sandi.....

I had a lettuce, tomato,and cucumber sandwich today. Pepper and salt to top it off.

Cucumbers are a good addition. Toasted whole wheat, cucumbers and mayo sandwiches are pretty good.
If you want to add meat to it. Try some slow roasted corned beef. Mix the mayo with a dash of vinegar and a bit of horseradish.
Another thing I like to put on just about everything, is fresh minced Anaheim Chilies. Not too hot, pretty mild and add a bunch of flavor. A couple spoonfuls on a tomato and mayo sandwich would liven things up a bit.
Now I am hungry.

Tomato slice, fresh mozzarella, fresh basil leaf, drizzle with olive oil and salt and pepper. No bread needed. Also known as caprese salad.
