Anyone have any advice of aquatic plants wanting some emergent and submerged plants?

You don't "have to" have submerged plants, and some probably will show up by themselves.
Emergent, you could get Pickrelweed, Arrowhead, Blue Flag Iris, (they're a marginal), Sweet Flag, and various rushes and sedges. Stay away from Cattails, Yellow Lily Pads (Spatterdock) or White Lily Pads (found growing wild).
You could buy Hardy Lily Pads of different colors, they are depth specific, and won't spread like the wild ones will.
