I was thinking about attempting to get some Sweet Flag started in the upper shallow area of my pond but have mallards around and was wondering they will eat it before it ever gets going?

Also what's the best way to get it started, by root or seed? The area I'm looking at is around 600 Square feet. Water lever is anywhere from 2" to a foot or so.

I'd go with roots, and fence off the area that you plant it from the ducks until it gets established, at least a year.

Seeds are cheaper no doubt, take longer and more variables, you can start in small patch and transplant, or can make some strips with chicken wire and plant some rows with seeds. anchor the chicken wire down with rocks or stakes or shallow burial

i make a cage/ball of chicken wire and put the tubers/seed in cage wired to cage, then bury the cage, my success rate is about 20%, so not too impressive but better than 0%
